Savoury Brown Rice Casserole

Ingredients
- Servings: 4
- 1 cup brown rice
- 3 slices bacon, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 4 tomatoes, blanched and chopped
- 2 cups liquid chicken stock
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 1 teaspoon salt
- pepper
- 25 g butter
Recipe
- 1 put rice, bacon, half the green and red peppers, tomatoes, stock, onion, garlic, salt and pepper into an oven proof casserole dish.
- 2 cover with a tight-fitting lid or foil.
- 3 cook at 180c for 1 1/2 hours or until rice is tender.
- 4 stir halfway through cooking.
- 5 just before serving, stir in butter and remaining red and green peppers.
