Practically-makes-itself Tarragon Chicken

Total Time: 1 hr 50 mins Preparation Time: 1 hr 10 mins Cook Time: 40 mins

Ingredients

  • 1 chicken, cut up or 4 large boneless chicken breasts
  • 1 cup wine
  • 1 tablespoon dried tarragon
  • 1/4 cup butter
  • salt & pepper, to taste
  • 1 cup mushroom, sliced (optional)
  • 1/2 cup wine
  • 1 tablespoon flour

Recipe

  • 1 mix 1 cup wine and 1 t. tarragon, marinate chicken for 1 hour.
  • 2 melt butter in frypan, brown chicken on all sides. add salt & pepper and mushrooms, if desired.
  • 3 add marinade, cover, cook 1/2 hour.
  • 4 remove chicken to dish, bring drippings to boil.
  • 5 mix 1/2 cup wine and flour, add to drippings, whisk until thick and bubbly.
  • 6 pour sauce over chicken.
  • 7 good with rice (for gravy!).
