Practically-makes-itself Tarragon Chicken

Ingredients
- 1 chicken, cut up or 4 large boneless chicken breasts
- 1 cup wine
- 1 tablespoon dried tarragon
- 1/4 cup butter
- salt & pepper, to taste
- 1 cup mushroom, sliced (optional)
- 1/2 cup wine
- 1 tablespoon flour
Recipe
- 1 mix 1 cup wine and 1 t. tarragon, marinate chicken for 1 hour.
- 2 melt butter in frypan, brown chicken on all sides. add salt & pepper and mushrooms, if desired.
- 3 add marinade, cover, cook 1/2 hour.
- 4 remove chicken to dish, bring drippings to boil.
- 5 mix 1/2 cup wine and flour, add to drippings, whisk until thick and bubbly.
- 6 pour sauce over chicken.
- 7 good with rice (for gravy!).
