Spicy Fried Rice

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 3
  • 1 celery rib, diced
  • 1/2 medium yellow onion, diced
  • 1 carrot, diced
  • 1 jalapeno, diced
  • 3 cups cold cooked rice
  • 1 tablespoon garlic powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 -3 tablespoons black soy sauce
  • 1 scallion, sliced into small pieces

Recipe

  • 1 heat a wok to medium high heat and add 1-2 tablespoons of vegetable oil.
  • 2 add the celery, onion and carrot, stir fry for 1-2 minutes, add the jalapeno and stir fry for about 30 seconds. push to the side of the wok.
  • 3 add 1 tablespoon vegetable oil, crack 2 eggs in wok and scramble until done.
  • 4 mix the eggs and vegetables together well.
  • 5 add the rice, garlic powder, sugar, salt and soy sauce to vegetable mixture mixing well.
  • 6 remove from wok and put in serving bowl and sprinkle with the scallions.
