Spicy Fried Rice

Ingredients
- Servings: 3
- 1 celery rib, diced
- 1/2 medium yellow onion, diced
- 1 carrot, diced
- 1 jalapeno, diced
- 3 cups cold cooked rice
- 1 tablespoon garlic powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 -3 tablespoons black soy sauce
- 1 scallion, sliced into small pieces
Recipe
- 1 heat a wok to medium high heat and add 1-2 tablespoons of vegetable oil.
- 2 add the celery, onion and carrot, stir fry for 1-2 minutes, add the jalapeno and stir fry for about 30 seconds. push to the side of the wok.
- 3 add 1 tablespoon vegetable oil, crack 2 eggs in wok and scramble until done.
- 4 mix the eggs and vegetables together well.
- 5 add the rice, garlic powder, sugar, salt and soy sauce to vegetable mixture mixing well.
- 6 remove from wok and put in serving bowl and sprinkle with the scallions.
