Red Curry Cauliflower

Ingredients
- Servings: 4
- 1 tablespoon grapeseed oil
- 1/2 medium onion, cut into 1/2 inch chunks
- 1/3 cup red curry paste (or to taste)
- 14 ounces coconut milk
- 1 large head cauliflower, cut into florets
- 1/2 cup thinly sliced green onion
- 1/4 cup fresh cilantro, chopped
- 1/4 cup chopped peanuts
Recipe
- 1 heat oil in large saucepan over medium heat.
- 2 add onion and cook, stirring, until light golden.
- 3 add curry paste and cook, stirring, another couple of minutes.
- 4 add coconut milk and bring to a boil.
- 5 add cauliflower and return to a boil.
- 6 reduce heat to medium low, cover and simmer until cauliflower is tender, about 15 minutes.
- 7 stir in green onions.
- 8 transfer to serving dish and sprinkle with cilantro and peanuts.
- 9 serve with jasmine rice (or whatever rice you choose).
