Red Curry Cauliflower

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 tablespoon grapeseed oil
  • 1/2 medium onion, cut into 1/2 inch chunks
  • 1/3 cup red curry paste (or to taste)
  • 14 ounces coconut milk
  • 1 large head cauliflower, cut into florets
  • 1/2 cup thinly sliced green onion
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup chopped peanuts

Recipe

  • 1 heat oil in large saucepan over medium heat.
  • 2 add onion and cook, stirring, until light golden.
  • 3 add curry paste and cook, stirring, another couple of minutes.
  • 4 add coconut milk and bring to a boil.
  • 5 add cauliflower and return to a boil.
  • 6 reduce heat to medium low, cover and simmer until cauliflower is tender, about 15 minutes.
  • 7 stir in green onions.
  • 8 transfer to serving dish and sprinkle with cilantro and peanuts.
  • 9 serve with jasmine rice (or whatever rice you choose).
