Spaghetti Chitarra Parmigiana

Ingredients

  • Servings: 4
  • 1/4 cup olive oil
  • 2 1/2 tablespoons butter
  • 8 medium mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 dash chili pepper, crushed
  • 2 teaspoons powdered oregano
  • 1 1/2 lbs fresh chitarra pasta

Recipe

  • 1 on medium heat, in a small, heavy skillet, heat two tablespoons of olive oil and add one tablespoon of butter.
  • 2 when the butter is melted, add sliced mushrooms.
  • 3 saute for about two minutes or just until mushrooms lose their crispiness.
  • 4 drain and set aside.
  • 5 in a large skillet, put the remainder of the olive oil and butter.
  • 6 add garlic and stir on medium heat for about two minutes.
  • 7 add mushrooms, crushed chilies and oregano and saute for about 20 seconds.
  • 8 add cooked pasta, salt and pepper to taste and toss all together until well mixed.
  • 9 serve hot, sprinkled with freshly grated parmesan cheese.
