Ingredients
- Servings: 4
- 1/4 cup basmati rice
- 1 tablespoon sliced almonds
- 3 slices bacon (streaky in uk)
- 2 tablespoons olive oil (if needed)
- 1 onion, chopped
- 1 yellow bell pepper, diced
- 2 garlic cloves
- 1 1/2 cups vegetable broth or 1 1/2 cups chicken broth
- 2 cups frozen peas
- 4 tablespoons cream (single in uk)
- salt and pepper
Recipe
- 1 toast rice in dry cast iron pan until lighty golden, shaking pan occasionally, about 5-7 minutes. remove and set aside. toast almonds in same manner and set aside.
- 2 cook bacon in same pan until very crisp. remove to cool and then crumble; set aside.
- 3 saute onions, peppers and garlic until almost tender, about 10 minutes. add rice, stir and add broth. cook 5 minutes. add peas and cook 5-8 minutes.
- 4 add cream and stir. let simmer to allow liquid to evaporate and for mixture to thicken. season with salt and pepper to taste.
- 5 serve with bacon and almonds sprinkled on top.
- 6 enjoy!
