Ingredients
- 1 lb brie cheese (rind removed and torn into irregular pieces)
- 4 large tomatoes (cut into 1/2 inch pieces)
- 3 garlic cloves (finely chopped)
- 1 cup good quality olive oil
- 1 cup basil (cut in thin strips)
- 2 1/2 teaspoons salt
- 1 teaspoon ground pepper
- 1 1/2 lbs linguine
- freshly grated parmesan cheese, to top
Recipe
- 1 combine tomatoes, brie, basil, garlic, olive oil, salt & pepper in a large serving bowl.
- 2 leave covered at room temperature for at least 2 hours.
- 3 just before serving cook pasta according to package directions, drain and and toss into the uncooked sauce, season to taste.
- 4 plate and top with the parmesan.
- 5 prep time does not include sitting time.
