Rice Pudding

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 11 cups milk
  • 1 1/2 cups sugar
  • 1 ounce cornstarch
  • 1 cup rice
  • 1 cup raisins
  • 3 eggs
  • 1 tablespoon vanilla
  • 2 tablespoons butter

Recipe

  • 1 place first 5 ingredients in pot and bring to a boil. when it comes to a boil immediately put on "simmer" until rice is tender (1/2 hr). stir.
  • 2 beat the remaining 3 ingredients in a separate bowl and add about a spoonful (at a time) of the above to the bowl to gently introduce the milk mixture to the egg mixture. by doing it this way the eggs will not curdle.
  • 3 when enough has been introduced to the egg mixture empty the bowl of egg mixture into the pot. stir and place in bowl to cool. refrigerate.
