Rice Pudding

Ingredients
- Servings: 8
- 11 cups milk
- 1 1/2 cups sugar
- 1 ounce cornstarch
- 1 cup rice
- 1 cup raisins
- 3 eggs
- 1 tablespoon vanilla
- 2 tablespoons butter
Recipe
- 1 place first 5 ingredients in pot and bring to a boil. when it comes to a boil immediately put on "simmer" until rice is tender (1/2 hr). stir.
- 2 beat the remaining 3 ingredients in a separate bowl and add about a spoonful (at a time) of the above to the bowl to gently introduce the milk mixture to the egg mixture. by doing it this way the eggs will not curdle.
- 3 when enough has been introduced to the egg mixture empty the bowl of egg mixture into the pot. stir and place in bowl to cool. refrigerate.
