Spinach-parmesan Couscous

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 1 medium onion, chopped
  • 1 garlic clove, crushed
  • 2 tablespoons olive oil
  • 1 (14 1/2 ounce) can chicken broth
  • 1 (10 ounce) package frozen chopped spinach
  • 1 (10 ounce) package couscous
  • 3/4 cup freshly grated parmesan cheese
  • 1/2 cup chopped pecans, toasted
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Recipe

  • 1 saute onion and garlic in hot oil in a large saucepan until tender.
  • 2 add broth and spinach; cook until spinach thaws, stirring occasionally.
  • 3 bring to a boil, stirring occasionally.
  • 4 stir in couscous; cover, remove from heat, and let stand 5 minutes or until liquid is absorbed.
  • 5 stir in cheese and remaining ingredients.
  • 6 serve immediately.
