Spicy Black Bean Soup

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup red wine or 1/2 cup stock or 1/2 cup water
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups water or 4 cups stock
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 2 cups sliced okra
  • 2 teaspoons finely minced fresh ginger (don t omit ginger)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup diced zucchini
  • 1 (15 ounce) can black beans, with liquid
  • 1 -2 tablespoon soy sauce
  • 4 cups cooked brown rice
  • 2 smoked sausage
  • 1 habanero pepper (optional)

Recipe

  • 1 braise the onion and garlic in wine until onion is soft.
  • 2 add tomatoes, water, green pepper, celery, okra, ginger, and seasonings; simmer for 15 minutes.
