Spicy Black Bean Soup

Ingredients

- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1/2 cup red wine or 1/2 cup stock or 1/2 cup water
- 1 (28 ounce) can crushed tomatoes
- 4 cups water or 4 cups stock
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 2 cups sliced okra
- 2 teaspoons finely minced fresh ginger (don t omit ginger)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 cup diced zucchini
- 1 (15 ounce) can black beans, with liquid
- 1 -2 tablespoon soy sauce
- 4 cups cooked brown rice
- 2 smoked sausage
- 1 habanero pepper (optional)
Recipe
- 1 braise the onion and garlic in wine until onion is soft.
- 2 add tomatoes, water, green pepper, celery, okra, ginger, and seasonings; simmer for 15 minutes.
