Black Beans And Rice

Ingredients

  • Servings: 10
  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3/4 cup uncooked rice
  • 1 1/2 cups low sodium, low fat vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 3 1/2 cups canned black beans, drained

Recipe

  • in a stockpot over medium-high heat, heat the oil. add the onion and garlic and saute for 4 minutes. add the rice and saute for 2 minutes.

California Casserole

Ingredients

  • Servings: 6
  • 2 cups chicken stock
  • 3/4 cup uncooked long grain rice
  • 2 cups sour cream
  • 2 (4 ounce) cans diced green chiles
  • 1/2 cup chopped green onions
  • 1/2 teaspoon salt
  • black pepper to taste
  • 4 cups shredded monterey jack cheese

Recipe

    Preparation Time: 30 mins Cook Time: 45 mins Ready Time: 1 hr 15 mins

  • preheat the oven to 350 degrees f (175 degrees c). grease 1 1/2 quart casserole dish.
  • bring chicken stock to a boil in a saucepan over medium heat. add rice, reduce heat to low, and cook until the liquid is absorbed, about 20 minutes. in a medium bowl, mix together the sour cream, green chilies, green onion, salt and pepper. set aside.
  • spread half of the rice into the bottom of the prepared pan. spread with half of the sour cream mixture, and then half of the cheese. repeat layers ending with cheese on top.
  • bake uncovered for 45 to 50 minutes in the preheated oven, or until the cheese is melted and bubbly. let stand for 5 minutes before serving.

dead man's cheese ball

Ingredients

  • 1 1/4 pounds sharp cheddar cheese, shredded
  • 1 cup sour cream
  • 1/4 cup butter, melted and cooled
  • 1 tablespoon prepared horseradish
  • 1 teaspoon prepared hot mustard
  • 2 dashes chipotle hot sauce
  • 1 clove garlic, minced
  • 1/4 cup
  • 1/2 cup black sesame seeds

Recipe

    Preparation Time: 20 mins Ready Time: 2 hrs 20 mins

  • in the container of a food processor, combine the cheddar cheese, sour cream, butter, horseradish, hot mustard, chipotle sauce, garlic and . pulse until smooth. you can use a potato masher in a large bowl but it will take longer.
  • line a bowl with plastic wrap, and fill with the cheese mixture. cover and refrigerate for at least 2 hours, or overnight.
  • toast the sesame seeds in a dry skillet over medium heat just until fragrant, about 3 minutes. gather the plastic wrap around the cheese mixture and form into a ball. remove the plastic wrap and roll the ball in sesame seeds to coat. place in the center of a platter and surround with your favorite chips or crackers.

  • 1/4 cup grated parmesan cheese
  • 1 teaspoon salt

  • preheat oven to 400 degrees f (200 degrees c).
  • season flour, eggs, and bread crumbs with salt and pepper. mix cayenne pepper into the flour only. dip each breast into flour, then into the beaten eggs, and then into the bread crumbs, coating evenly. place a greased cookie sheet. bake for 15 minutes on each side or until brown and crispy.

red lentil curry

Ingredients

Chicken Mole With Four Chiles

Ingredients

  • 4 dried mulato chiles
  • 4 dried ancho chiles
  • 4 dried guajillo chiles
  • 4 dried pasilla chilies
  • 2 teaspoons lard, or more as needed
  • 1 large onion, peeled and chopped
  • 4 cloves garlic, chopped
  • 1 (7 inch) flour tortilla
  • 2 (5 inch) corn tortillas
  • 1 plantain, peeled and chopped
  • 1/2 cup almonds
  • 1/2 cup peanuts
  • 1/8 cup sesame seeds
  • 1 (14 ounce) can whole peeled tomatoes
  • 1 tablet of mexican chocolate, such as abuelita or ibarra
  • 1 whole chicken

    Ready Time: 3 hrs

  • remove the stems, veins and seeds from the chiles (you might want to wear gloves when you do this). heat the lard in a heavy skillet over medium heat. add the chiles, and cook and stir until the chiles are fragrant, about 1 minute, being careful not to burn them. remove the chiles and place them in a large bowl.
  • stir in the onion and garlic, and cook until the onion is soft and translucent, about 5 minutes. remove and add to the bowl with the chiles.
  • break the flour and corn tortillas into pieces, and add them to the skillet. toast on both sides, turning often, until golden brown, about 3 minutes. remove; add to the bowl.
