Spicy Beans And Rice (core)

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 cups uncooked brown rice
  • 2 cups water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1 dash pepper
  • 1 (15 ounce) can red kidney beans
  • 11 ounces mexicorn
  • 10 ounces diced tomatoes with green chilies, drained
  • 1/2 cup salsa
  • 1 cup fat-free cheddar cheese

Recipe

  • 1 in 2 qt microwave safe dish, combine first six ingredients. microwave on high for 5-7 minutes or until water is absorbed.
  • 2 stir in beans, mexicorn, tomatoes and salsa. top with cheese.
  • 3 cover and microve on high for 2-3 minutes.
