Split Pea And Rice Soup

Ingredients
- Servings: 4
- 1 cup split peas
- 3 cups water
- 2 cups onions, chopped
- 2 garlic cloves, pressed
- 1/4 cup olive oil
- 2 bay leaves
- 1 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne
- 2 cups vegetable broth
- 2 teaspoons lemon juice
- 1/2 cup cooked rice
- salt and pepper
- fresh parsley, chopped
Recipe
- 1 rinse peas. cook in the 3 cups water (45 minutes).
- 2 sauté onion and garlic in the olive oil. add spices and sauté for 5-10 more minutes. set aside.
- 3 when peas are cooked, stir in onion mixture and vegetable stock. add lemon juice and rice. season with salt and pepper. serve topped with the fresh parsley.
