Split Pea And Rice Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup split peas
  • 3 cups water
  • 2 cups onions, chopped
  • 2 garlic cloves, pressed
  • 1/4 cup olive oil
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne
  • 2 cups vegetable broth
  • 2 teaspoons lemon juice
  • 1/2 cup cooked rice
  • salt and pepper
  • fresh parsley, chopped

Recipe

  • 1 rinse peas. cook in the 3 cups water (45 minutes).
  • 2 sauté onion and garlic in the olive oil. add spices and sauté for 5-10 more minutes. set aside.
  • 3 when peas are cooked, stir in onion mixture and vegetable stock. add lemon juice and rice. season with salt and pepper. serve topped with the fresh parsley.
