Cheesy Black Bean Casserole

-  cooking spray 
 
-  3 cups cooked brown rice 
 
-  2 (14.5 ounce) cans black beans, rinsed and drained 
 
-  1 (10 ounce) can diced tomatoes with green chile peppers, drained 
 
-  2 cups ricotta cheese 
 
-  1 (8 ounce) package shredded mozzarella cheese 
 
-  1/4 cup grated parmesan cheese 
 
-  1 tablespoon parsley 
 
-  1 teaspoon ground black pepper 
 
-  1 slice tomato (optional)

- preheat oven to 350 degrees f (175 degrees c). prepare a 9x13-inch baking dish with cooking spray. 
 
- mix cooked brown rice, black beans, diced tomatoes with green chile peppers, ricotta cheese, mozzarella cheese, parmesan cheese, parsley, and black pepper in prepared dish.
