Spinach-parmesan Couscous

Ingredients

- 1 medium onion, chopped
- 1 garlic clove, crushed
- 2 tablespoons olive oil
- 1 (14 1/2 ounce) can chicken broth
- 1 (10 ounce) package frozen chopped spinach
- 1 (10 ounce) package couscous
- 3/4 cup freshly grated parmesan cheese
- 1/2 cup chopped pecans, toasted
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
Recipe
- 1 saute onion and garlic in hot oil in a large saucepan until tender.
- 2 add broth and spinach; cook until spinach thaws, stirring occasionally.
- 3 bring to a boil, stirring occasionally.
- 4 stir in couscous; cover, remove from heat, and let stand 5 minutes or until liquid is absorbed.
- 5 stir in cheese and remaining ingredients.
- 6 serve immediately.
