Stuffed Cornish Game Hens

Ingredients

- 8 cornish hens
- 1 cup wild rice
- 3 tablespoons butter
- 1/2 cup toasted almond
- 1/2 cup chopped onion
- 1 teaspoon salt
- 1 teaspoon thyme
- 1/2 teaspoon marjoram
- 8 slices bacon
Recipe
- 1 cook and drain rice.
- 2 saute onion in butter.
- 3 mix with rice, almonds, salt and herbs.
- 4 salt and pepper hens and stuff with rice mixture.
- 5 put a strip of bacon over each hen.
- 6 cook, uncovered, for 1 1/2 to 2 hours at 325, basting occasionally with drippings.
