Spinach And Ricotta With Shells

Ingredients

- 1 lb small shell pasta, cooked to al dente
- 1/3 cup olive oil
- 1 onion, chopped
- 1 garlic clove, minced
- 1 lb baby spinach
- 1 lb ricotta cheese
- 3/4 cup grated parmesan cheese (plus more for serving)
Recipe
- 1 cook pasta.
- 2 while it is cooking, heat olive oil in a large skillet, add onion and garlic and cook until onion is softened, about 5 minutes.
