Ingredients

- 1 1/2 cups coconut milk
- 2 1/2 cups water
- 1 stalk scallion
- 1 small onion
- 2 sprigs thyme
- 1/8 teaspoon salt
- 2 cups rice
- 2 cups red kidney beans
- 1 small scotch bonnet pepper
Recipe
- 1 in a pot, combine coconut milk, water and seasonings, bring to boil.
- 2 add rice, red kidney beans, salt and stir.
- 3 add scotch bonnet pepper.
- 4 cover and reduce heat, allow to simmer until grains are soft.
