Rice And Peas

Ingredients

  • 1 1/2 cups coconut milk
  • 2 1/2 cups water
  • 1 stalk scallion
  • 1 small onion
  • 2 sprigs thyme
  • 1/8 teaspoon salt
  • 2 cups rice
  • 2 cups red kidney beans
  • 1 small scotch bonnet pepper

Recipe

  • 1 in a pot, combine coconut milk, water and seasonings, bring to boil.
  • 2 add rice, red kidney beans, salt and stir.
  • 3 add scotch bonnet pepper.
  • 4 cover and reduce heat, allow to simmer until grains are soft.
