Rice & Veggie Wrap With Tahini Dressing

Ingredients

  • Servings: 4
  • 1 (20 ounce) package flour tortillas (burrito size)
  • 1 1/2 cups cooked rice (use dirty rice from caribbean burritos for camping trip)
  • 2 carrots, chopped large
  • 1 bunch kale, chopped
  • 1 large head broccoli, cut in small florets
  • 1/4 cup roasted sunflower seeds
  • 1 lemon, juiced
  • 1/2 cup tahini
  • 3 garlic cloves
  • 1/2 cup water (to thin)

Recipe

  • 1 start the rice. while that cooks, chop and steam the vegetables. prepare the tahini dressing and mix well. once rice is done, combine in a large bowl with the sunflower seeds and steamed vegetables. pour over the rice and vegetables and mix together. fill tortillas with mixture, roll and eat.
  • 2 for camping trip, skip making brown rice or combining rice with veggies and steamed vegetables. instead, put the dirty rice from the caribbean burrito on the tortilla, put some vegetable mixture on top, drizzle on some dressing, and then roll and eat.
