Spinach And Tortellini Soup

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 5 (14 1/2 ounce) cans chicken broth (or 9 cups)
  • 2 teaspoons dried italian herb seasoning
  • 8 -9 ounces chicken tortellini or 8 -9 ounces cheese tortellini
  • 2 (14 1/2 ounce) cans diced tomatoes with juice
  • 1 bunch fresh spinach, rinsed, stemmed and chopped or 1 (8 ounce) package prewashed spinach
  • 1/2 cup freshly grated parmesan cheese

Recipe

  • 1 in oil in a large pot over medium heat, cook onion and garlic about 10 minutes until lightly browned.
  • 2 add broth and herbs, bring to boil.
  • 3 stir in tortellini, reduce heat and simmer 10-15 minutes.
  • 4 stir in tomatoes with juice and simmer 5 more minutes.
  • 5 add chopped spinach and simmer 3-5 minutes.
  • 6 season with salt and pepper. serve with a sprinkling of cheese on top.
