Suzy's 3 Bean Chicken Chili

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 lbs boneless chicken breasts, diced
  • 1 large onion, chopped
  • 2 medium green peppers, chopped
  • 16 ounces tomato sauce
  • 1 tablespoon vinegar
  • 1 1/4 ounces chili seasoning mix
  • 1 cup barbecue sauce, i use sweet baby ray's
  • 16 ounces pinto beans, drained
  • 16 ounces kidney beans, drained
  • 16 ounces black beans, drained
  • 1 teaspoon fresh garlic

Recipe

  • 1 saute chicken in a large skillet with onion and green peppers.
  • 2 add 1/4 cup water and cook covered until vegetables are soft.
  • 3 do not drain.
  • 4 add all other ingredients, cover and simmer 20 minutes.
  • 5 serve with rice.
  • 6 note: i usually end up adding a little more barbeque sauce here and there, and if you like it spicier, 1 tsp of crushed red pepper flakes usually does the trick.
