Suzy's 3 Bean Chicken Chili

Ingredients

- 2 lbs boneless chicken breasts, diced
- 1 large onion, chopped
- 2 medium green peppers, chopped
- 16 ounces tomato sauce
- 1 tablespoon vinegar
- 1 1/4 ounces chili seasoning mix
- 1 cup barbecue sauce, i use sweet baby ray's
- 16 ounces pinto beans, drained
- 16 ounces kidney beans, drained
- 16 ounces black beans, drained
- 1 teaspoon fresh garlic
Recipe
- 1 saute chicken in a large skillet with onion and green peppers.
- 2 add 1/4 cup water and cook covered until vegetables are soft.
- 3 do not drain.
- 4 add all other ingredients, cover and simmer 20 minutes.
- 5 serve with rice.
- 6 note: i usually end up adding a little more barbeque sauce here and there, and if you like it spicier, 1 tsp of crushed red pepper flakes usually does the trick.
