Spaghetti With Creamy Tomato And Goat Cheese Sauce

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 garlic clove, crushed
  • 2 cups tomatoes, chopped
  • 12 ounces spaghetti
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons parsley, chopped
  • black pepper

Recipe

  • 1 heat oil in skillet; stir in garlic and saute for 1 minute.
  • 2 add tomatoes and simmer until reduced to a thick mixture, about 10 minutes.
  • 3 meanwhile, cook the spaghetti in plenty of boiling water, 7-10 minutes.
  • 4 add the goat cheese to the tomato sauce; heat, stirring, over low heat until fairly smooth.
  • 5 toss the hot pasta with the tomato sauce, parsley and black pepper.
