Spinach And Artichoke Penne Pasta

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 0.75 (1 lb) box penne pasta
  • 2 tablespoons olive oil
  • 5 garlic cloves, pressed
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 (12 ounce) jar artichoke hearts, drained and cut up
  • 6 ounces fresh spinach leaves
  • 1 cup parmesan cheese

Recipe

  • 1 boil penne pasta according to package directions. drain and set aside.
  • 2 meanwhile, heat 3/4 cup of olive oil over med-high heat in a large skillet.
  • 3 add pressed garlic and saute for 1-3 minutes until golden brown.
  • 4 add diced tomatoes and artichoke hearts. allow to heat through.
  • 5 stir in parmesan cheese, stirring constantly until melted.
  • 6 add in spinach and stir until all leaves are wilted.
  • 7 add in pasta and mix it all through.
  • 8 enjoy!
