Spaghetti With Fresh Tomato Sauce

Ingredients

  • Servings: 4
  • 4 large soft ripe tomatoes
  • 2 garlic cloves, finely chopped
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh marjoram, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2/3 cup olive oil
  • 2 tablespoons molasses
  • salt and pepper
  • 450 g spaghetti

Recipe

  • 1 skin tomatoes by placing them in boiling water for 1 minute- no longer. lift out and plunge in ice water. peel off skins, chop into 1/4 inch cubes. mix with the other sauce ingredients in a non-metalic bowl. cover and let stand for at least 30 minutes.
  • 2 cook the pasta in plenty of boiling, salted water. drain pasta and mix with the sauce. cover with a lid and leave for 2-3 minutes, toss again and serve immediately.
