Spinach & Tortellini Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb fresh tortellini (your choice)
  • 10 ounces fresh spinach
  • 6 cups chicken stock
  • 6 garlic cloves
  • 1 tablespoon olive oil
  • 0.5 (19 ounce) can beans, rinsed and drained (navy, canellini or kidney)
  • salt
  • pepper
  • fresh nutmeg, grated
  • 1/4 cup parmesan cheese

Recipe

  • 1 in large saucepan heat olive oil and saute garlic.
  • 2 add chicken stock and bring to a boil.
  • 3 add pasta and cook until desired tenderness.
  • 4 add beans and heat.
