Spinach & Tortellini Soup

Ingredients

- 1 lb fresh tortellini (your choice)
- 10 ounces fresh spinach
- 6 cups chicken stock
- 6 garlic cloves
- 1 tablespoon olive oil
- 0.5 (19 ounce) can beans, rinsed and drained (navy, canellini or kidney)
- salt
- pepper
- fresh nutmeg, grated
- 1/4 cup parmesan cheese
Recipe
- 1 in large saucepan heat olive oil and saute garlic.
- 2 add chicken stock and bring to a boil.
- 3 add pasta and cook until desired tenderness.
- 4 add beans and heat.
- 5 add spinach
- 6 the heat should cook the spinach.
- 7 add seasonings.
- 8 ladle into bowls and sprinkle with parmesan cheese.
