Roman Rice And Beans

Ingredients

  • Servings: 8
  • 1 -2 tablespoon olive oil
  • 2 garlic cloves, crushed
  • 1 onion, chopped
  • 1 -2 carrot, chopped
  • 1 stalk celery
  • 1 green pepper
  • 2/3 cup fresh parsley
  • 2 -3 teaspoons basil
  • 2 teaspoons oregano
  • 2 -3 large tomatoes, coarsely chopped
  • salt and pepper
  • 2 cups canned red kidney beans
  • 5 cups cooked brown rice, cooked with
  • 1 teaspoon salt
  • 1/2 cup parmesan cheese, grated

Recipe

  • 1 heat oil and saute garlic, onion, carrots, celery, green pepper, parsley, and dried herbs until onion is translucent.
  • 2 add tomatoes, salt, and pepper, and beans.
  • 3 combine rice and parmesan cheese.
