Ingredients

- 1 -2 tablespoon olive oil
- 2 garlic cloves, crushed
- 1 onion, chopped
- 1 -2 carrot, chopped
- 1 stalk celery
- 1 green pepper
- 2/3 cup fresh parsley
- 2 -3 teaspoons basil
- 2 teaspoons oregano
- 2 -3 large tomatoes, coarsely chopped
- salt and pepper
- 2 cups canned red kidney beans
- 5 cups cooked brown rice, cooked with
- 1 teaspoon salt
- 1/2 cup parmesan cheese, grated
Recipe
- 1 heat oil and saute garlic, onion, carrots, celery, green pepper, parsley, and dried herbs until onion is translucent.
- 2 add tomatoes, salt, and pepper, and beans.
- 3 combine rice and parmesan cheese.
- 4 add bean mixture to rice mixture.
- 5 garnish with more fresh parsley and grated cheese.
