Sardines In Tomato Sauce

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 large onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 tablespoon vegetable oil (i prefer peanut) or 1 tablespoon peanut oil (i prefer peanut)
  • 1 (7 ounce) can sardines, drained
  • 2 large tomatoes, peeled and chopped
  • 1 cup water (approx.)
  • cayenne pepper (or more, to taste)
  • 1 bunch spinach or 1 bunch turnip greens or 1 bunch kale or 1 bunch collard greens or 10 ounces frozen spinach

Recipe

  • 1 in a large heavy pan, brown the onion and garlic in the oiil. add the other ingredients and cover.
  • 2 simmer for about 20 minutes and serve over rice.
