Roasted Red Pepper, Corn And Black Bean Soup

Ingredients

  • Servings: 4
  • 1 quart chicken broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 12 ounces roasted red peppers, drained and diced
  • 1 cup corn
  • 2 cups chopped onions
  • 3/4 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes
  • 1/8 teaspoon allspice
  • 1/2 cup diced ham
  • 2/3 cup uncooked long grain rice
  • salt and pepper

Recipe

  • 1 combine all ingredients, except, rice, salt and pepper, in slow cooker.
  • 2 cook on high 4-6 hours, adding rice during the last 2 hours. season to taste with salt and pepper.
