Roasted Red Pepper, Corn And Black Bean Soup

Ingredients

- 1 quart chicken broth
- 1 (15 ounce) can black beans, rinsed and drained
- 12 ounces roasted red peppers, drained and diced
- 1 cup corn
- 2 cups chopped onions
- 3/4 teaspoon dried thyme
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon allspice
- 1/2 cup diced ham
- 2/3 cup uncooked long grain rice
- salt and pepper
Recipe
- 1 combine all ingredients, except, rice, salt and pepper, in slow cooker.
- 2 cook on high 4-6 hours, adding rice during the last 2 hours. season to taste with salt and pepper.
