Spaghetti With Cherry Tomatoes For 1!

Ingredients
- Servings: 1
- 125 g spaghetti (i use wholemeal)
- 1 tablespoon olive oil
- 1 clove garlic, crushed
- 2 small zucchini, grated
- 125 g cherry tomatoes, halved
- chopped fresh parsley, to serve (optional)
Recipe
- 1 cook pasta until al dente, following packet directions.
- 2 drain.
- 3 heat the oil in a small non-stick frying pan over medium heat.
- 4 add garlic, zucchini and tomatoes.
- 5 cook, stirring, for about 3 minutes.
- 6 stir through the hot cooked pasta.
- 7 season to taste with salt and pepper and serve sprinkled with parsley.
