Orange Teriyaki Tofu

Ingredients

- 1 lb firm tofu (not extra-firm)
- 1/4 cup soy sauce or 1/4 cup tamari soy sauce
- 3 tablespoons rice vinegar
- 3 tablespoons maple syrup
- 1/2 cup orange juice
- 2 teaspoons finely grated orange rind
- 1 teaspoon finely chopped fresh gingerroot
- 2 cloves garlic, finely chopped
- 1/4 teaspoon dry mustard
- chopped fresh coriander or parsley
Recipe
- 1 cut tofu into bite-sized squares.
- 2 place in shallow baking dish or casserole.
- 3 in small bowl, combine soy, vinegar, maple syrup, orange juice, orange rind, ginger, garlic and mustard.
- 4 pour over tofu.
- 5 marinate at least 1 hour or up to 24.
- 6 pour marinade into measuring cup.
- 7 return 1/2 cup (125 ml) to tofu in baking dish and discard the rest.
- 8 bake in a preheated 375*f (190c) oven about 1 hour, gently stirring and basting every 20 minutes.
- 9 serve garnished with coriander or parsley.
- 10 makes 4 servings.
