Spinach And Tomato With Whole Wheat Pasta

Ingredients

- olive oil
- 8 garlic cloves, minced
- 1 pint grape tomatoes, quartered
- 1 (9 ounce) bag fresh spinach
- 8 ounces whole wheat rotini pasta
- 1 cup grated monterey jack with jalapeno
- crushed red pepper flakes
- salt
Recipe
- 1 put on water for pasta and cook according to box directions.
- 2 meanwhile, heat olive oil in skillet and add crushed red pepper to your desired level of spiciness.
- 3 add garlic and saute just until fragrant, about 3 minutes.
- 4 add tomatoes and saute just until warm, about 3 additional minutes.
- 5 add spinach and cook until wilted.
- 6 season with salt, if desired.
- 7 combine cooked pasta with spinach and tomato mixture.
- 8 add grated cheese until melted. if mixture is too dry, add pasta water until it is at your desired level of moisture.
