Spinach And Tomato With Whole Wheat Pasta

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • olive oil
  • 8 garlic cloves, minced
  • 1 pint grape tomatoes, quartered
  • 1 (9 ounce) bag fresh spinach
  • 8 ounces whole wheat rotini pasta
  • 1 cup grated monterey jack with jalapeno
  • crushed red pepper flakes
  • salt

Recipe

  • 1 put on water for pasta and cook according to box directions.
  • 2 meanwhile, heat olive oil in skillet and add crushed red pepper to your desired level of spiciness.
  • 3 add garlic and saute just until fragrant, about 3 minutes.
  • 4 add tomatoes and saute just until warm, about 3 additional minutes.
  • 5 add spinach and cook until wilted.
  • 6 season with salt, if desired.
  • 7 combine cooked pasta with spinach and tomato mixture.
  • 8 add grated cheese until melted. if mixture is too dry, add pasta water until it is at your desired level of moisture.
