Portuguese Spiced Rice

Total Time: 23 mins Preparation Time: 5 mins Cook Time: 18 mins

Ingredients

  • Servings: 4
  • 1 cup rice
  • 2 3/4 cups water
  • 1 1/2 tablespoons butter
  • 1 teaspoon salt
  • 1 dash black pepper
  • 1 dash garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ketchup
  • 1 small onion, finely chopped
  • 1 (10 ounce) can sliced mushrooms or 1 (10 ounce) can baby clams, rinsed
  • 1/4 cup bell pepper, diced (any colour) (optional)

Recipe

  • 1 combine all of the ingredients in a large microwavable casserole dish with a lid. cook in the microwave on high for 18 minutes, or until the rice is tender and the water is absorbed. fluff with a fork and serve.
