Stuffed Bell Peppers

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • 6 medium green peppers
  • 1 lb ground beef
  • 1/3 cup onion, chopped
  • 1 (14 1/2 ounce) can stewed tomatoes
  • 3/4 cup minute rice, cooked
  • 2 tablespoons worcestershire sauce
  • salt and pepper
  • 1 cup shredded cheese (i use colby & monterey jack)

Recipe

  • 1 preheat oven to 350°f
  • 2 cut off tops of green peppers; remove seeds and membrane. precook green peppers cups in boiling salted water, about 5 minutes. drain; sprinkle inside with salt.
  • 3 brown meat and onions. add tomatoes, rice, worcestershire sauce and salt and pepper to taste. cover and simmer until rice is almost tender, about 5 minutes.
  • 4 add 1/2 cup cheese.
  • 5 stuff peppers and stand upright in 10 x 6 x 1 1/2 inch baking dish. sprinkle with the remaining cheese.
  • 6 bake uncovered at 350°f for 25 minutes or until hot.
