Rice With Almonds And Pine Nuts

Total Time: 55 mins Preparation Time: 5 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 2 1/2 cups water
  • 1 cup brown rice, uncooked
  • 1/4 cup coarsely chopped almonds
  • 3 tablespoons pine nuts
  • 3 tablespoons honey
  • 1 1/2 tablespoons reduced sodium soy sauce

Recipe

  • 1 bring water to a boil in a medium saucepan. add rice. when water boils again, reduce heat to low, cover, and simmer 45 minutes, until rice is tender and most of the liquid has cooked out. remove from heat and let stand covered, 5 minutes.
  • 2 while rice is cooking, heat a small nonstick skillet over medium-high heat. spray with a nonstick cooking spray. place almonds and pine nuts in skillet and cook, stirring constantly, just until nuts are lightly toasted.
  • 3 spoon hot rice into a serving bowl and add nuts, along with honey and soy sauce. mix well.
  • 4 serve hot.
