Spinach Artichoke Dip Casserole With Chicken

Ingredients

- 3 cups brown rice (cooked in chicken broth)
- 2 -3 chicken breasts, cubed
- 1 (10 ounce) package frozen spinach, thawed
- 1/2 onion, diced
- 3 garlic cloves, minced
- 3/4 cup light mayonnaise
- 1 (14 ounce) jar marinated artichoke hearts, chopped
- 3/4 cup parmesan cheese
Recipe
- 1 preheat oven to 375.
- 2 in greased 9x11 baking dish, spread rice and then add cubed chicken evenly over the top.
- 3 saute garlic and onion in small amount of oil.
- 4 mix mayo, artichoke hearts, parmesan cheese, spinach, and onion/garlic and mix well. spread evenly over chicken/rice layer.
- 5 cover with foil and cook 20 minutes. remove foil and bake an additional 15 minutes or until chicken is no longer pink and casserole is heated trhough.
