Spinach Artichoke Dip Casserole With Chicken

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 3 cups brown rice (cooked in chicken broth)
  • 2 -3 chicken breasts, cubed
  • 1 (10 ounce) package frozen spinach, thawed
  • 1/2 onion, diced
  • 3 garlic cloves, minced
  • 3/4 cup light mayonnaise
  • 1 (14 ounce) jar marinated artichoke hearts, chopped
  • 3/4 cup parmesan cheese

Recipe

  • 1 preheat oven to 375.
  • 2 in greased 9x11 baking dish, spread rice and then add cubed chicken evenly over the top.
  • 3 saute garlic and onion in small amount of oil.
  • 4 mix mayo, artichoke hearts, parmesan cheese, spinach, and onion/garlic and mix well. spread evenly over chicken/rice layer.
  • 5 cover with foil and cook 20 minutes. remove foil and bake an additional 15 minutes or until chicken is no longer pink and casserole is heated trhough.
