Savory Rice Pilaf

Ingredients

- 2 cups long grain rice
- 1 tablespoon olive oil
- 4 cups chicken stock
- 1/2 cup apple juice
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 teaspoons lemon juice
- 1/2 teaspoon dried thyme
Recipe
- 1 in a large saucepan, combine the rice and oil. stir over medium heat until the rice is golden brown, about 5 minutes.
- 2 add the stock, apple juice, onions, garlic, lemon juice and thyme.
- 3 bring to a boil. reduce heat to low, cover the pan, and simmer until all the liquid has been absorbed and the rice is tender, about 20 minutes.
- 4 fluff with a fork before serving.
