So Simple Mexican Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 3
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 1 tablespoon tomato bouillon
  • 1 cup rice (long grain)
  • 2 cups water
  • 1 tablespoon chopped parsley (optional)

Recipe

  • 1 heat the oil and butter in a pan on medium heat.
  • 2 add the rice and stir until all the grains are coated with the oil/butter mixture and lightly toasted.
  • 3 add water and tomato bouillon.
  • 4 stir to combine throughly.
  • 5 allow to come to a boil.
  • 6 reduce heat to low and cover. no peeking!
  • 7 simmer for 15-20 minutes or until all water is absorbed.
  • 8 allow rice to rest for 5 minutes after cooking.
  • 9 fluff with a fork and serve!
  • 10 garnish with parsley if desired.
