Spicy Tomato Macaroni And Cheese

Ingredients

  • Servings: 6
  • 16 ounces your favorite penne pasta
  • 1/4 cup butter or 1/4 cup margarine
  • 1/2 medium sweet onion, chopped
  • 1 (8 ounce) package velveeta mexican cheese, cubed
  • 1 (8 ounce) container sour cream
  • 1 (10 ounce) can rotel tomatoes, drained

Recipe

  • 1 cook pasta according to package directions, draining well.
  • 2 melt butter in a large skillet over medium heat; add onion and sauté 3 to 5 minutes or until tender.
  • 3 add cheese and cook, stirring constantly, 5 minutes or until cheese melts.
  • 4 stir in sour cream, blending well.
  • 5 stir in rotel tomatoes and pasta; cook and stir constantly, 5 minutes or until heated through.
