Ingredients

- 16 ounces your favorite penne pasta
- 1/4 cup butter or 1/4 cup margarine
- 1/2 medium sweet onion, chopped
- 1 (8 ounce) package velveeta mexican cheese, cubed
- 1 (8 ounce) container sour cream
- 1 (10 ounce) can rotel tomatoes, drained
Recipe
- 1 cook pasta according to package directions, draining well.
- 2 melt butter in a large skillet over medium heat; add onion and sauté 3 to 5 minutes or until tender.
- 3 add cheese and cook, stirring constantly, 5 minutes or until cheese melts.
- 4 stir in sour cream, blending well.
- 5 stir in rotel tomatoes and pasta; cook and stir constantly, 5 minutes or until heated through.
