Spinach Rice Gratin Recipe

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 1/2 cups cooked brown rice
  • 1 1/2 cups finely chopped uncooked spinach
  • 4 ounces firm tofu, crumbled
  • 10 black olives, chopped
  • 1/2 medium red onion, diced
  • 1/3 cup pine nuts, toasted
  • 2 tablespoons olive oil
  • 1/2 cup shredded manchego cheese
  • 3 large eggs
  • 1/2 teaspoon fine grain sea salt

Recipe

  • 1 preheat oven to 400°f
  • 2 place rack in the top third of oven. grease a 10 inch round baking dish with a bit of olive oil.
  • 3 in a large bowl combine the rice, spinach and tofu.
  • 4 now, reserving a bit of each for garnish, stir in the olives, red onion,pine nuts and olive oil.
  • 5 stir in 1/4 cup of the cheese.
  • 6 in a small bowl whisk the eggs and salt.
  • 7 fold the eggs into the rice mixture.
  • 8 pour into the prepared baking dish, and sprinkle with remaining cheese.
  • 9 bake for 30 minutes or until the casserole is set and the top is toasty and golden.
  • 10 remove from the oven and sprinkle with reserve onions, olives and nuts. sprinkle with a bit more cheese.
