Spinach Rice Gratin Recipe

Ingredients

- 2 1/2 cups cooked brown rice
- 1 1/2 cups finely chopped uncooked spinach
- 4 ounces firm tofu, crumbled
- 10 black olives, chopped
- 1/2 medium red onion, diced
- 1/3 cup pine nuts, toasted
- 2 tablespoons olive oil
- 1/2 cup shredded manchego cheese
- 3 large eggs
- 1/2 teaspoon fine grain sea salt
Recipe
- 1 preheat oven to 400°f
- 2 place rack in the top third of oven. grease a 10 inch round baking dish with a bit of olive oil.
- 3 in a large bowl combine the rice, spinach and tofu.
- 4 now, reserving a bit of each for garnish, stir in the olives, red onion,pine nuts and olive oil.
- 5 stir in 1/4 cup of the cheese.
- 6 in a small bowl whisk the eggs and salt.
- 7 fold the eggs into the rice mixture.
- 8 pour into the prepared baking dish, and sprinkle with remaining cheese.
- 9 bake for 30 minutes or until the casserole is set and the top is toasty and golden.
- 10 remove from the oven and sprinkle with reserve onions, olives and nuts. sprinkle with a bit more cheese.
