Spinach Balls

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 (6 ounce) box stove top stuffing mix for chicken
  • 2 (10 ounce) packages frozen chopped spinach
  • 2/3 cup italian salad dressing (bottled is fine)
  • 3 eggs, lightly beaten
  • 1 cup parmesan cheese, grated
  • 1 cup fresh mushrooms, chopped
  • 1 small onion, chopped
  • 1 cup hot water

Recipe

  • 1 mix -- just add all the ingredients together in a medium size bowl and mix well. then form into 1" or golf ball size appetizers. place on a baking sheet sprayed with pam or a non stick spray or you can line the pan with parchment paper.
  • 2 bake -- heat the oven to 400 and bake the "balls" for 12-15 minutes until golden brown. this will make around 40 balls.
  • 3 i usually split the recipe in half, but it depends on the crowd. these never last very long. i like to serve a creamy parmesan dip on the side.
