Spicy Black-eyed Peas And Rice

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 cups cooked brown rice
  • 1/2 bell pepper, chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 (14 1/2 ounce) can diced tomatoes with juice
  • 1 cup tomato sauce
  • 1 (15 ounce) can black-eyed peas, rinsed and drained

Recipe

  • 1 mix all ingredients together ina large skillet.
  • 2 bring to a boil, stirring frequently.
  • 3 cover, reduce heat, and simmer for 10 minutes or until heated through.
  • 4 this is a versatile recipe. feel free to use different seasonings or beans if these don't strike your fancy.
