Saraosta's ... Favorite Creamy Rice And Peas

Ingredients
- 3 cups cooked rice
- 1 cup baby peas
- 2 shallots, very fine diced
- 3/4 cup heavy cream (more of less depending on how creamy you want the rice)
- 1/4 cup pecorino romano cheese
- 2 teaspoons minced fresh thyme
- salt
- pepper
- pecorino romano cheese (optional)
Recipe
- 1 rice -- use whatever method you want and whatever type of rice you want for this dish - that is not what is important. you want around 3 cups. a little more is fine, this isn't an exact recipe.
- 2 sauce -- as the rice cooks, heat up the cream, shallot, and cheese in a small bowl or measuring cup in the microwave for just 1 minute on medium heat.
- 3 finish -- add the warm sauce to the cooked rice along with the fresh thyme, salt and pepper. mix well to combine. if you want it a bit creamier, add more cream. note: i just like to heat the cream first, just a few seconds in the microwave, so it is warm when i add it to the rice.
- 4 serve -- garnish with a little cheese if you want and serve. it goes with just about anything. enjoy!
