Spinach, Mushroom & Lemon Pilaf

Ingredients

  • Servings: 4
  • 2 onions, finely sliced
  • 2 garlic cloves, crushed
  • 50 g butter
  • 150 g button mushrooms, sliced
  • 1 cinnamon stick
  • 4 whole cloves
  • 4 cardamom pods, bruised
  • 250 g basmati rice
  • 1/2 zest and lemon, juice of
  • 450 ml vegetable stock
  • 200 g spinach, washed and roughly chopped

Recipe

  • 1 cook the onions and garlic in the butter in a large shallow pan until soft and golden.
  • 2 add the button mushrooms and cook until soft.
  • 3 add the spices and cook for 2 minutes, then stir in the rice, lemon zest and stock. cover. cook on a gentle heat for about 15 minutes until the liquid has been absorbed.
  • 4 stir through the spinach and lemon juice, cover for 2 minutes until wilted and serve.
