Rice Pudding From Leftover Rice

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 cups cooked rice
  • 2 cups milk
  • 1/2 cup half-and-half (or cream)
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 pinch cinnamon
  • 1/4-1/2 cup raisins
  • 2 egg yolks

Recipe

  • 1 bring rice, milk, cream and sugar to a boil.
  • 2 simmer 15 minutes stirring occasionally.
  • 3 stir in vanilla, cinnamon and raisins.
  • 4 cook until thick and creamy.
  • 5 tip: if you stir a lot at the end it will be creamier!
  • 6 turn off heat and stir in egg yolks.
  • 7 serve warm or chilled, i prefer chilled with this recipe.
