Rice Pudding From Leftover Rice

Ingredients

- 2 cups cooked rice
- 2 cups milk
- 1/2 cup half-and-half (or cream)
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 pinch cinnamon
- 1/4-1/2 cup raisins
- 2 egg yolks
Recipe
- 1 bring rice, milk, cream and sugar to a boil.
- 2 simmer 15 minutes stirring occasionally.
- 3 stir in vanilla, cinnamon and raisins.
- 4 cook until thick and creamy.
- 5 tip: if you stir a lot at the end it will be creamier!
- 6 turn off heat and stir in egg yolks.
- 7 serve warm or chilled, i prefer chilled with this recipe.
