Ingredients

- 4 salmon fillets, preferably wild salmon
- 1/4 cup dijon mustard
- 2 limes, juice and zest of
- 1/4 cup tequila
- 2 tablespoons ginger, freshly grated
- 1/4 cup olive oil
- 1/2 teaspoon dill
- 1/2 cup yogurt, preferably organic
- 1 dash old bay seasoning
- 1/2 cup honey
- 1 tablespoon salt
- 1/4 tablespoon pepper
Recipe
- 1 spray cooking spray in a baking dish and place the salmon skin-side down. in a medium bowl, combine remaining ingredients with a whisk. pour over the salmon and allow to marinate for at least 1/2 hour. then cook at 400° for 8-10 minutes, depending on thickness [watch it]. serve with wild rice and asparagus.
