Salmon Cinagro

Ingredients

  • Servings: 4
  • 4 salmon fillets, preferably wild salmon
  • 1/4 cup dijon mustard
  • 2 limes, juice and zest of
  • 1/4 cup tequila
  • 2 tablespoons ginger, freshly grated
  • 1/4 cup olive oil
  • 1/2 teaspoon dill
  • 1/2 cup yogurt, preferably organic
  • 1 dash old bay seasoning
  • 1/2 cup honey
  • 1 tablespoon salt
  • 1/4 tablespoon pepper

Recipe

  • 1 spray cooking spray in a baking dish and place the salmon skin-side down. in a medium bowl, combine remaining ingredients with a whisk. pour over the salmon and allow to marinate for at least 1/2 hour. then cook at 400° for 8-10 minutes, depending on thickness [watch it]. serve with wild rice and asparagus.
