Scots Dressing

Ingredients
- 2 medium onions, chopped
- 1 cup butter
- 4 cups oatmeal
- stock, from turkey giblets (or veg "chicken" stock for a vegetarian version)
- salt and pepper
Recipe
- 1 melt butter in large skillet.
- 2 soften onions in butter (do not brown).
- 3 add oatmeal and mix well.
- 4 season to taste.
- 5 use at this point to stuff turkey or chicken.
- 6 if making in a casserole, add the stock.
- 7 not too much, you want it to still be fairly dry.
- 8 bake at 350 degrees f for about 45 minutes.
