Spicy Rice And Kale

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 1/4 cups canned low sodium chicken broth or 2 1/4 cups low sodium vegetable broth
  • 1 1/2 teaspoons cajun seasoning (to taste)
  • 1 cup uncooked rice or 1 cup brown rice
  • 4 ounces kale, stems and ribs removed, leaves coarsely chopped (about 2 cups packed or 1/2 of a large bunch)

Recipe

  • 1 bring broth and cajun seasoning to a boil in a large heavy saucepan.
  • 2 stir in rice and kale and bring back to a boil.
  • 3 reduce heat to low, cover and cook until rice is tender and the liquid is absorbed, about 20 minutes for rice and 30 minutes for brown rice.
