Spicy Rice And Kale

Ingredients
- Servings: 6
- 2 1/4 cups canned low sodium chicken broth or 2 1/4 cups low sodium vegetable broth
- 1 1/2 teaspoons cajun seasoning (to taste)
- 1 cup uncooked rice or 1 cup brown rice
- 4 ounces kale, stems and ribs removed, leaves coarsely chopped (about 2 cups packed or 1/2 of a large bunch)
Recipe
- 1 bring broth and cajun seasoning to a boil in a large heavy saucepan.
- 2 stir in rice and kale and bring back to a boil.
- 3 reduce heat to low, cover and cook until rice is tender and the liquid is absorbed, about 20 minutes for rice and 30 minutes for brown rice.
