Spicy Rice

Ingredients

  • Servings: 4
  • 1 (20 ounce) can dole pineapple tidbits
  • 2 tablespoons vegetable oil
  • 2 garlic cloves, pressed
  • 1 yellow onion, chopped
  • 1 cup minced celery
  • 1 cup uncooked unconverted rice
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 (14 1/2 ounce) can chicken broth
  • 1/2 cup raisins
  • 1 cup frozen peas, thawed
  • 1/2 cup sliced green onion

Recipe

  • 1 drain pineapple, reserve juice.
  • 2 heat oil in large skillet.
  • 3 saute garlic, onion, and celery until onion is soft.
  • 4 stir in rice, reserved juice, seasonings, chicken broth and raisins.
  • 5 bring to a boil.
  • 6 cover, simmer 20 minutes until rice is tender.
  • 7 stir in peas, green onion and pineapple.
