Spicy Rice

Ingredients

- 1 (20 ounce) can dole pineapple tidbits 
 
- 2 tablespoons vegetable oil 
 
- 2 garlic cloves, pressed 
 
- 1 yellow onion, chopped 
 
- 1 cup minced celery 
 
- 1 cup uncooked unconverted rice 
 
- 1 teaspoon salt 
 
- 1 teaspoon ground cumin 
 
- 1/2 teaspoon ground ginger 
 
- 1/2 teaspoon turmeric 
 
- 1/8 teaspoon cayenne pepper (optional) 
 
- 1 (14 1/2 ounce) can chicken broth 
 
- 1/2 cup raisins 
 
- 1 cup frozen peas, thawed 
 
- 1/2 cup sliced green onion 
 
Recipe
- 1 drain pineapple, reserve juice. 
 
- 2 heat oil in large skillet. 
 
- 3 saute garlic, onion, and celery until onion is soft. 
 
- 4 stir in rice, reserved juice, seasonings, chicken broth and raisins. 
 
- 5 bring to a boil. 
 
- 6 cover, simmer 20 minutes until rice is tender.
