Spicy Sausage Rice

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 onion, finely chopped
  • 1 red pepper, finely diced
  • 1 tablespoon olive oil
  • 225 g basmati rice
  • 450 ml stock
  • 6 cooked sausages, sliced diagonally
  • 1 container salsa, sauce
  • chopped parsley, to taste

Recipe

  • 1 in a frypan (skillet), add the oil and place over medium heat.
  • 2 add the onion and pepper, and sauté for 5 minutes (or until tender).
  • 3 stir in the uncooked rice and the stock.
  • 4 simmer over low heat for 20 minutes, covered or until rice is tender and has absorbed all (or most) of the liquid.
  • 5 stir in the chopped sausages and salsa, simmer over medium heat for 5 minutes or until sausages are hot.
  • 6 add the chopped parsley and serve.
