Spicy Sausage Rice

Ingredients
- Servings: 4
- 1 onion, finely chopped
- 1 red pepper, finely diced
- 1 tablespoon olive oil
- 225 g basmati rice
- 450 ml stock
- 6 cooked sausages, sliced diagonally
- 1 container salsa, sauce
- chopped parsley, to taste
Recipe
- 1 in a frypan (skillet), add the oil and place over medium heat.
- 2 add the onion and pepper, and sauté for 5 minutes (or until tender).
- 3 stir in the uncooked rice and the stock.
- 4 simmer over low heat for 20 minutes, covered or until rice is tender and has absorbed all (or most) of the liquid.
- 5 stir in the chopped sausages and salsa, simmer over medium heat for 5 minutes or until sausages are hot.
- 6 add the chopped parsley and serve.
